In creative mode you can just punch out unwanted blocks you know, it's not like you gotta mine them out with diamond picks!

The update should be out within the next 24 hours. Microsoft have a 2 week deadline for certification testing but take that with a pinch of salt, since they aren't always reliable :/

But what makes you say this? Did they say they were done with the update?
