Shao Kahn from MK2, one of the hardest beat em up bosses, along with SF4's Seth.

Soul Reaver 2 had you facing and killing all of Kain's lieutenants before they became vampires, and was a nice twist.

Stonehead, Scissorhead, Paperhead and Janken the Great from Alex Kidd in Miracle World (to beat them you had to play stone, paper, scissors and win).

The Weapons from Final Fantasy VII, I still remember the first time I stumbled upon Ruby Weapon, I did not last long.

I fucking HATED Seth. And Khan was horribly hard on the arcade. He was much easier on the console version.
