I have an ice cream maker, yeah. But you can always freeze your mixture of syrup and puréed fruit overnight, then take out and cut into chunks before adding back into the food processor and pulsed until you get the consistency you're looking for.
My favorites are usually just the standards like strawberry (with fresh mint) and watermelon (any kind of melon, really), but my girl recently made a batch of pink-grapefruit and tarragon that was really good, too.
